How do you make Mac and Cheese in the US?

The creamy cheese noodles are among the most popular dishes in the US and they come in many different variations. Some opt for the quick version of cooking the macaroni in milk and simply adding the cheeses to it. Others refine it with garlic, onions or bacon, for example, and push it into the stovepipe for baking. Very popular is also the baking with another cheese layer and breadcrumbs.
They are a timeless classic and you will find this delicious pasta dish on almost every menu.
However, with American kids, macaroni and cheese are just as popular as hamburgers, fries, nuggets or pizza.
When we ask our grandson what he wants to eat, he almost always replies with Mac and Cheese. Whether we are in the Cheesecake Factory or Steakhouse, that's his favorite. Of course, his mom also likes to cook him at home. And I looked over her shoulder and wrote down the recipe. With her there is usually the variant with a delicious crust of cheese and breadcrumbs.
Yesterday we had guests who love American cuisine, so I made Mac and Cheese for them and of course the elaborate twist on my daughter-in-law.
Actually, you need three different types of cheese that you can choose according to your taste. But it also works with two varieties, if you are not a friend of Cheddar as we are.
Ingredients for 6 people;
500 g macaroni, 2 cloves of garlic, 50 g flour, 900 ml milk, 500 g grated cheese about three different sorts, 80 g butter and 1 tbsp butter and half a cup of breadcrumbs for baking.
Cook the noodles according to the packing instructions, preheat the oven to 180 degrees top / bottom heat and provide a rectangular casserole dish.
The cheese sauce is made with a light roux or bechamel sauce.
Melt the butter in a suitable saucepan, lightly fry the finely chopped garlic and add the flour. Mix with a whisk and make sure that there are no lumps or burns. Gradually add the slightly warmed milk and simmer over low heat until the sauce thickens. Stir again, seasoning with salt and pepper and then remove from heat.
From the grated cheese, put a small cup full aside for gratinating. Put the remaining cheese in the pot with the sauce and let it melt while stirring. Now mix in the macaroni drained in a pasta strainer and then place in the casserole dish.
Melt the butter in a small pan and stir in the breadcrumbs. Spread the leftover cheese and breadcrumbs over the macaroni and put them in the oven. After 20 minutes, the Mac and Cheese are finished with a golden brown crust.
